Aubergine and red lentils spring rolls

Vegetarian, Bento, Cuisine, Recipes, Zoé

Dinner
-Aubergine and red lentils spring rolls
-Maize boiled and then grilled
-Oyster mushroom scallops

Here, the aubergine are still in season and the winter isn’t at all settling. I’d rather say that it’s late summer beginning of autumn. This is one of the pleasure of living more southern than last year! I had a good luck while surfing on the Messy vegetarian’s blog and the spring rolls are freely inspired from his recipe. It was a true treat with some boiled and grilled maize and our favourite mushroom scallops. A nice meal before I take the night train to the wintery north.

Shortbread biscuit

Vegetarian, Bento, Cuisine, Recipes, Zoé

Tea treat
-Frapped coffee
-Sesame shortbread biscuit with redcurrant jelly
-Nectarine

This is an old photo from late august in Warsaw. It was one of these sunny Polish days when I had time to do pies and when I had some left-overs of crust-pastry. What can one do with it? I usually just roll it down and do some little squares, on which I sprinkle with sesame seeds, or nuts. There are really great with a little bit of jam and a Greek cafe frappe. I do long to have time again to bake and day dream.

Red rice and terrific meat alike balls

Vegetarian, Bento, Cuisine, Recipes, Zoé

Bento content
-3 meat alike balls
-1/2 tomato
-1/4 aubergine sliced cooked with a spray of oil, chilli pepper, salt and pepper
-1/4 orange pepper bell
-1 little maize
-1/8 cucumber
-Red rice
-Homemade furitake

One more little idea to colour naturally rice: tomato sauce! It’s amazing it didn’t appear on the blog before because it’s one item which comes often on our table! Mum usually does it with green olives which gives a nice little taste. Though I usually eat it hot, it’s nice cool too. And it was really delicious with some little vegetables cooked and fresh. And today, I didn’t forget the pulse to have a well-balanced vegetarian bento. I did some really great “meat” balls with smoked tofu and gluten. The taste is really incredible and Bear was totally seduced by it. And now I can redo my favourite easy and express pasta recipe: “meat balls” with tomato sauce.
Happy!

Courgette treat as a good bento item

Vegetarian, Bento, Cuisine, Recipes, Zoé

Bento content
-Coco and banana jelly
-Polish pickles (ogorki)
-Mini tomatoes
-Maize
-Rice with pumpkin pickle
-Courgette treat

Monday isn’t my favourite day. Going back to work with a cold, being so tired and knowing that I’m late in my work, that I should have worked the week-end too, that I’ll need to hurry…I’m so happy I took time to prepare this little bento Sunday to warm my heart up with good homemade food. And this bento has a new item which is truly great eaten cold also: courgette slices seasoned with soya sauce, rice vinegar and to which I tossed in some homemade furitake. Tomorrow will be easier, it’s Tuesday.

Blueberry pie

Vegetarian, Bento, Cuisine, Recipes, Zoé

Tea time treat
-Blueberry pie
-Raspberry tea smoothie
-Toast with strawberry jam

I just can’t believe it, three days ago it was snowing in Warsaw. Here, it is really sunny, and we still need fresh beverages to cool us down! Therefore I did iced tea, which I mixed with raspberries to have a sweet smoothie which was just right with the blueberry pie. Did, you ever do blueberry pie? And? How many times was it not properly set, full of blueberry juice? First tip: spread almond powder on the crustpastry before delaying the blueberries. Second tip: add a teaspoon of potato starch with the sugar in the blueberries. And this will do the trick! :)

Comment: the fruits I used here are frozen fruits from my mum’s garden.
