Aubergine and red lentils spring rolls

Here, the aubergine are still in season and the winter isn’t at all settling. I’d rather say that it’s late summer beginning of autumn. This is one of the pleasure of living more southern than last year! I had a good luck while surfing on the Messy vegetarian’s blog and the spring rolls are freely inspired from his recipe. It was a true treat with some boiled and grilled maize and our favourite mushroom scallops. A nice meal before I take the night train to the wintery north.

Courgette treat as a good bento item

Monday isn’t my favourite day. Going back to work with a cold, being so tired and knowing that I’m late in my work, that I should have worked the week-end too, that I’ll need to hurry…I’m so happy I took time to prepare this little bento Sunday to warm my heart up with good homemade food. And this bento has a new item which is truly great eaten cold also: courgette slices seasoned with soya sauce, rice vinegar and to which I tossed in some homemade furitake. Tomorrow will be easier, it’s Tuesday.

Wooden bento box, raw courgette spaghetti

Bento content:
-Vegetarian sushi with vinegar prune and carrot
-Raw courgette spaghetti with sunflower sauce
-Carrot sticks
-Nectarine

I wanted to use my not air nor liquid tight wooden bento. Therefore I had to find things which would be dry enough and wouldn’t leek. So one raw recipe for the top layer with courgette spaghettis and a sunflower miso sauce to spice them up.
I tried to do some vinegar prune (I have no idea how the original Japanese should taste, I’m not staying here long enough to properly make these pickles) to stuff the sushis. A few nectarine slices completed the meal. Because of the fruit I had to wrap the bento with cling film.

Mushroom polish soup

This night, we are, as usual, really in a hurry. I didn’t have much time and so we did a really quick meal. I prepared some mushroom soup (following Agda’s instructions) with their self grown oyster mushrooms. We added some salads and a little vegetarian hot dogs (with mustard, ketchup and mayonnaise) to mimic polish habits when on the road. We have such fun lately!

Lentils pot for a real joy

Tonight, I was feeling lonely and shuffled through my cupboards to see what was left. I’m not buying long life ingredients when I finish them as we are going to leave at the end of next month. I found these forgotten lentils and dreamed of an easy heart warming hot lentils pots with white Arborio rice toped with my favourite homemade furitake.
When, Bear came back home tired from a hard day at work, he gently made himself comfortable in my arms and appreciated this little quickly made and so easy meal full with love. Maybe this is the mysterious ingredient which made this lentil pot so tasty?
