This is an old photo from late august in Warsaw. It was one of these sunny Polish days when I had time to do pies and when I had some left-overs of crust-pastry. What can one do with it? I usually just roll it down and do some little squares, on which I sprinkle with sesame seeds, or nuts. There are really great with a little bit of jam and a Greek cafe frappe. I do long to have time again to bake and day dream.

So happy, I’m back cooking again on a daily basis. Bear is too! This bento is full of little things I missed these last days: homemade cookies, jelly, houmous, rice and raw vegetables and fruits.
It’s stupid but humus isn’t something common in France. I mean you cannot go in any shop and find can of houmous. Unfortunatly. And jelly is just unavailable and I tend to avoid mousses because of gelatine.
So back at home, with very little time and just blended a banana and add coco flakes a little lemon to prevent the banana to turn brown and agar-agar. And here you are!
As I told you yesterday, I wanted a to add a little more flavour to my ham. How? Well, I played with the breading. As usual I headed towards my okara box better than bread crumbs and looked for miso and spices! The result was really great!
And today’s treat were these little cookies mostly made out of sesame and maple syrup.

Pesto verde two ways and red soup

Hi! How are you all today? Managed to get up early to post a little! I was quite tired and really busy lately (well, think that I’ll be busy until June at least…)
This is why I’m so eager to find some quickly made dinners, to ease my week. One idea is this everyday soup. This time it’s a red soup made of beetroot, carrot and mandarin mainly. A real pleasure at each spoon.
And I may be busy and really in a hurry I won’t give up homemade food! No way!
Bear relied a lot before on these pesto verde cans. It’s a quick sauce that is really good on spaghetti! Something quickly made, healthy and delicious? I had to have a go and make some.
One which would have no palm oil, no artificial food colouring or additional “things” with their so sexy names starting with E and some numbers…
Conclusion? Well, I have to admit, the little basil I managed to grow was not enough to redo some, so we went to the market to make some more…with some aubergine. We used it as a spread in some sandwiches…

Spinach and ricotta lasagne

I’m so happy when I can find some fresh spinach and I really wanted to have a go for spinach and ricotta lasagne.
As you may have understood, I’m trying to get a little more organised to have dinner served a little more quickly as I have also to run to get also our next day bentos ready.
So I have prepared some little soup. This one is sweet and spicy at the same time, the sweetness comes from the apple and the spicy from chilli pepper. I’ll prepare it quite thick and store it in the fridge (remember I have no freezer to rely on) and I’ll add a little water before reheating.
The lasagne is also a good meal which could last us two evenings. But I have to admit that we liked it too much to have any leftovers for the next evening…

Vegan cookies to hold on this week

I really have to admit it, I need tea treats! To reward me from getting up, to get a smile from Bear, before getting in bed…or just…well, do one really need a reason to bite in a cookie while burning their hand holding a cup of hot beverage?
For me cookies is not cake-like but crispy and still a little chewy. I at least achieved these so wanted cookies, and they are vegan!
Hey, yes, I had no more eggs in the fridge.
So by the way I veganised the short breads by using silken tofu instead of yoghurt.
These tea treats didn’t take me so long to prepare, I mainly just had to be patient and wait that they finished baking.
