Waffle when alone

Vegetarian, Bento, Cuisine, Recipes, Zoé

Lunch
Quick broccoli salad (chilli pepper, olive, broccoli)
Waffles
Tofu Chantilly
-Cherries

Sunshine. The dresses are popping out. Streets are full with bare legs. Female or male (picture the males with shorts not skirts, mean no offence to Scotland though). I’m resting in the garden under the shade of a fig tree. I’m treating myself with a salad that Bear would hate: crunchy broccolis (he likes them all soggy) with pepper bells (I still can’t get him to eat that). As a dessert, I guess he wouldn’t say no to my waffles but I know he would sulk at the cherries. But, this is the perfect meal for me. Like an enormous Christmas present, I cherished each bite.
I’m used to making a full batch of waffles and freeze the leftovers. They are perfect when my bread monster has eaten up all the bread with none left for breakfast. I just reach for them in the freezer and toss them in the toaster. I even prefer them this way as they come out with a crispy coat.
But I have to check on Bear, though he usually isn’t so keen in dessert, he can eat them all up on a movie night with some sweet chestnut purée.

Chile, a kitchen and a summer lunch

Vegetarian, Bento, Cuisine, Recipes, Zoé

Lunch

-Little summer salad (pealed tomato, cucumber and lemon)
-Melon (half)
Tomato, courgette, olive and tofu pie.

Chile, end of the stay, a little flat shared with a friend. An oven, some great flour (I’d love to bring back tones of this flour). An evening baking where we ended as wet phantoms as one started to throw a pinch of flour to the other, then the other grabbed the near by glass half full of water…a great baking night.
The pie leftovers were completed for lunch with a little cucumber tomato salad and a melon. What more can you ask for?
Maybe that Bear could share these moments with me…

Polish soup : Parówkowy gulasz w jarzynami

Vegetarian, Bento, Cuisine, Recipes, Zoé

Dinner
Polish soup (tomato soup with peas and vegan sausage),
-Toasted bread,
Tofu balls,
Sauerkraut

Bear is away all week. I’m lying on my favourite fluffy carpet, hanging on the phone with my sister while waiting that my soup cools down. It’s a simple meal that I would qualify of comfort food as it brings back a lot of memories from our Polish stay. A meal that Bear often asks for : quick simple and really yummy. A good way to fight winter.

By the way, has anyone a good recipe for vegan sausages? I’d love to be able to replicate the I-bought-them-myself ones.

P.S.: Eve, the homemade tomato sauce and the peas come from my freezer.

Express pasta meal

Vegetarian, Bento, Cuisine, Recipes, Zoé

Dinner
Meaty tofu and gluten balls
Tomato sauce
-Pasta
Apple crumble

Some evenings are a little bit more busier than others. For these evenings I have some meat alike balls in the freezer that I can quickly accommodate with tomato sauce and pasta. It is one of my favourite express meals. What are your favourite express meals?

Apple crumble pie and chinese spinach soup

Vegetarian, Bento, Cuisine, Recipes, Zoé

Dinner
Chinese spinach and tofu soup
-Steamed Jerusalem artichokes
-Steamed carrots
Sauercraut with mushrooms
Apple crumble pie

I quickly pop in to show you a quickly baked tart. As things go so quickly, I’m not really creative in my kitchen so I stick to the basics. Bear took care of the sauercraut while I took care of the pie, the soup and my mummie’s home grown vegetables. I’m just trying to do quick and tasty meals that would make me happy to be alive and leave me time to share some quality time with Bear. I hope that you can find some ways to share at least half an hour a day with your loved ones.

Little pots for a quick meal

Vegetarian, Bento, Cuisine, Recipes, Zoé

Dinner
Aubergine and potato pot
-Carrot salad
-Lettuce
Leftovers of spaghetti in a pot (for me)
Potato and smoked tofu pot (for Bf)

Spring is not yet here in Poland but I’m already carving for fresh salads. But salads are not fulfilling enough. To highlight them I prepare some quick little pots to reheat our stomach. We started with some aubergine and potato pots, and then completed our meal with a second bigger pot. Bear’s had a pot which is the vegetarian version of gratin dauphinois with smoked tofu, and I ate our lunch’s leftovers, namely vegetarian spaghetti bolognese. Though these pots are not hard to prepare we just loved eating them. Was it the meal or the fact that three
days apart seemed really long?

Not so creative lately

Vegetarian, Bento, Recipe, Cuisine, Zoé

Bento content
Falafel
Humus
Leek and apple salad
-Soba coloured in violet (with red cabbage)
Tofu dumplings
-Boiled red cabbage
-Corn, carrot salad
Cauliflower tempura

Well, well…this is true life. And I’m sure that most of you sometimes think that my bento are really too long to prepare, that I’m crazy and I’m locked in my kitchen.
So I want to be true with you : I have no freezer, I have few time, so well, this bento is similar to the day before, and the one before…Only cauliflower crakers were quickly made yesterday evening. Then, I boiled some red cabbage and boil the pasta in this water to obtain a light violet colour which is nearly invisible.

And you, do you have any tip to speed up bento making without freezer, canned, or bought food? Not, that I complain…I love homemade food!
